That is why I love easy and quick dinners. These Air Fryer Quesadillas totally fit that bill. Most of the ingredients I already had in my pantry which made it so simple to make. Ingredient Notes
- Vegan Cheese-Vegan Cheddar Cheese is the perfect cheese for these quesadillas. I love using the Follow Your Heart brand. I find that it has the best melt and the best cheese taste.
- Black Beans-I love how filling black beans are. They are one of my favorite protein sources. We will use a whole can for this recipe. If you don't like black beans, feel free to swap them for your favorite vegan protein.
- Flour Tortillas- I find that flour tortillas are the best kind to make quesadillas with. They are generally larger and hold more toppings and they don't fall apart as easily.
- Taco Seasoning- To make this recipe super simple, I seasoned the vegetables with pre-made taco seasoning. I like to get a salt-free variety to keep this recipe lower in sodium, however feel free to get what you want!

How to Make Quesadillas
- Sauté the Vegetables: Finely dice the vegetables and add them to a pan and sauté over medium heat until tender, about 5 minutes.
- Assemble the quesadillas: Grab your tortillas and sprinkle it evenly with your desired amount of cheese. Spoon the veggie mixture and black beans onto half of the tortilla, then fold over the other side to make a half moon.
- Air Fry the Quesadillas: Place the quesadillas in the air fryer and press down with your hand to seal. Set the air fryer at 370 degrees and cook for 5 minutes or until the tortilla is golden and the cheese is melted.
- Serve warm: With your favorite salsa, guacamole, and/or sour cream.
Hint: If you are making a large batch of quesadillas, add them to a sheet pan and keep them in an oven that has been preheated to 200 degrees. Leave them there until ready to serve.
Substitutions and Variations
- Add extra protein- Add some extra protein to this recipe by using extra beans or adding vegan beef!
- Vegetables - Feel free to use whatever vegetables you like! I love using whatever is in season. Some of my favorite vegetables to add are zucchini and squash!
- Roasted Vegetables - Feel free to roast the vegetables instead of sautéing them.
- Extra Toppings - I love loading these quesadillas up with salsa, guacamole, and vegan sour cream!

Easy Air Fryer Quesadilla
Equipment
- 1 Air Fryer
- 1 Can Opener
- 1 Sauté Pan
Ingredients
- 4 flour tortillas
- 1 ½ cups cheese
- 14 ounces black beans 1 can
- 1 red onion
- 1 cup corn
- 1 red bell pepper
- 1 package taco seasoning
Instructions
- Heat 1 tablespoon oil over medium-high heat in a sauté pan. Add the veggies and black beans, and sauté for 4-5 minutes. Stir in the taco seasoning and sauté for 2 more minutes. Transfer the mixture to a large bowl and set aside.
- Grab a tortilla and sprinkle your desired amount of cheese evenly over the surface of the tortilla. Add a few large spoonfuls (about 1 cup) of the veggie mixture on one half of the tortilla. Fold the other side of the tortilla over to create a half moon.
- Add the tortilla to the air fryer basket and air fry at 370 degrees for 5 minutes.
- Transfer to a serving plate, slice into triangles, then repeat with the remaining ingredients.
- Serve warm, along with your favorite salsa, guacamole and/or sour cream for dipping.
