I don't know about you but I love a good toast recipe. I eat toast or english muffins everyday for breakfast. It is my favorite! However, I feel really millennial when I go to a restaurant and order a fancy toast. This blueberry toast is one of those fancy toasts. It is perfect for a brunch with friends with mimosas and served alongside a hearty breakfast. This toast is so fun and easy to make!

What Makes This Blueberry Toast So Great

Ingredient Notes
- Fresh Blueberries- It wouldn't be blueberry toast without blueberries. Make sure to use fresh blueberries in this recipe. Dried blueberries won't work and if you use frozen blueberries, you might have to thicken the sauce to account for the excess water.
- Seeded Bread-Part of what makes this recipe so delicious is the use of high-quality bread. I used a loaf of seeded bread that I got at my local Sprouts, however, this will work with whatever you have on hand.
- Cream Cheese-I used Kite Hill dairy-free cream cheese in this recipe, however, feel free to use your favorite non-dairy cream cheese.
- Yogurt- No need to go fancy with this recipe, I used plain dairy-free yogurt. You can use greek yogurt if you like or you can use regularly like I did.

Instructions
- Place the blueberries, maple syrup, lemon juice and 1 tablespoon of water in a small saucepan over medium heat and stir to combine.
- Bring the mixture to a simmer, stirring often until the berries soften and begin to break down, lightly mashing the berries to release their juice. Add the remaining ½ cup of blueberries and cook for another minute or two until the mixture is thick and syrupy.
- In a small bowl, mix together cream cheese, yogurt, and lemon zest until smooth and spreadable.
- Toast your favorite bread. I like a nice, crusty seeded loaf for this.
- Spread the cream cheese mixture on each slice of bread. Top with a dollop of blueberry compote.
- Before serving, sprinkle with extra lemon zest if desired.
Hint: If you are in a rush, feel free to use some fresh blueberry jam instead of making your own compote.

- Cream Cheese - Feel free to swap the cream cheese for your favorite spreadable vegan cheese.

Store the leftover cream cheese and blueberry mixture covered in the fridge for up to 3 days. Toast and assemble when ready to eat. I would not recommend storing toasted bread in the refrigerator as it will get soggy. It is best to toast fresh bread when eating as leftovers.
I would not recommend freezing the cream cheese mixture as it will curdle and separate.
