I don't know about you, but is there anything better than breakfast??? Breakfast is my favorite meal of the day and anytime I can extend that past actual breakfast time, I'm game. These Loaded Vegan Breakfast Nachos are the perfect breakfast-for-dinner idea. They are easy to make and a fun recipe for the whole family.
One of the things that I love about this recipe is that they are totally customizable! I also love that they are made on a sheet pan for easy cleanup. It makes doing dishes a breeze! I guarantee that everyone will love them!

Ingredient Notes and Substitutions
- Vegan Cheese-Vegan Cheddar Cheese is the perfect cheese for these nachos. I love using the Follow Your Heart brand. I find that it has the best melt and the best cheese taste. However, feel free to use your favorite vegan cheese brand or make your own vegan cheese sauce! - Tortilla Chips- Corn Tortilla chips are perfect for this recipe. Feel free to use your favorite brand or make your own!
- Just Egg- The base for this recipe is the Just Egg. Just Egg is my favorite egg replacer. In my opinion, it tastes exactly like eggs but it is cruelty-free and made from mung beans! You can find it at almost any supermarket these days. I normally get mine from Target! However, feel free to use a tofu scramble or your favorite egg replacement.
- Vegan Sausage- Impossible brand has the best vegan sausage in my opinion. I love how it browns just like regular sausage and the flavor is spot on! Feel free to use your favorite brand or swap for black beans instead!

Instructions
Step 1: In a large skillet, heat the olive oil over medium-high heat. Add the vegan sausage and cook until brown.
Step 2: In a non-stick skillet or pan, pour in the just egg and scramble it until it resembles scrambled eggs.
Step 3: Layer the chips onto the baking sheet, and try to spread them evenly as possible.
Step 4: Layer the scrambled vegan eggs over the tortilla chips, spreading them until they cover the whole sheet pan.
Step 5: Layer the vegan sausage, bell peppers and cheese over the top of the tortilla chips.
Step 6: Bake for 20 minutes or until the cheese is melted and the nachos are warmed through. Serve this family-style or serve up on plates and enjoy!
Hint: Make sure to spread the toppings over the tortilla chips all the way. You don't want bare tortilla chips!

Storage
The best way to store and reheat nachos is to store them deconstructed. Store the nacho toppings in an airtight container in the refrigerator for 2-3 days and when ready to reheat, layer the fresh chips and then the leftover toppings and microwave until warmed through.
I would not recommend freezing these nachos as the chips will become a weird texture when thawing and will no longer be crisp.

- Make sure to load these nachos up with cilantro, green onions, and diced peppers. Serve alongside some salsa, sour cream, and guacamole!
- You can easily serve this to picky eaters by turning this into a nacho buffet. Grab some oven-safe plates and allow the whole family to layer their nachos and then put the plates on a baking sheet and bake until the cheese is melted.
- You can swap the vegan sausage in this recipe with any other meat substitute. I love making these with soyrizo for a fun twist or use some vegan bacon or pinto beans instead.
