I don't know about you, but if you put a plate of brownies and cookies in front of me and asked me to choose, I don't know what I would be able to pick. On one hand, I love the soft, sugary, and pillowy cookies. On the other, I love the rich chocolate taste of the brownie. I mean, how could you choose one or the other?? So I got to thinking. Why not choose both? Was there a way to have both the soft, sugary cookie and the decadent brownie all in one? The answer is yes! These brownie blondies are so easy to make and totally delicious! It is the perfect marrying of two delicious sweet treats, you won't want to miss out!

Ingredient Notes
- Cocoa Powder-I use Hershey's Cocoa Powder. Make sure to sift it if it is lumpy!
- All-Purpose Flour- The base of this recipe is flour. If you are gluten-free you can swap the all-purpose flour with a 1:1 gluten-free flour blend.
- Flax Eggs- The flax eggs take the place of the regular eggs in this recipe. Check out how to make the flax eggs here.
- Vegan Butter Sticks- These brownie blondies are fluffy and buttery, the key is using vegan butter sticks. I love using the Earth Balance Brand, however, feel free to use whatever vegan butter you have on hand.

Instructions
Making the Brownies
- To make the flax egg, add 1 tablespoon of flaxseed to 2 tablespoons of water and let sit for 5 minutes.
- Whisk together the melted butter, brown sugar, and white sugar in a large bowl until well combined.
- Add the flax eggs, and vanilla extract. Whisk until smooth and creamy.
- Add the flour, cocoa powder, and salt into the bowl.
- Gently whisk the ingredients together until just combined. Be very careful not to over mix the batter! It will be quite thick.
- Then, set the bowl aside while you make the blondies.
Making the Blondies
- To make the flax egg, add 1 tablespoon of flaxseed to 2 tablespoons of water and let sit for 5 minutes.
- In a separate bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined.
- Add the flax eggs, and vanilla extract. Whisk until smooth and creamy.
- Then, add the flour and salt to the bowl.
- Whisk the flour and salt into the batter until evenly combined. Again, be careful not to over mix.
- Set the bowl aside and then spray an 8x8" baking pan with non-stick spray or line with parchment paper.
How to Make The Brownie Blondie Swirl
- Start by adding a scoop of blondie batter into two opposite corners of the prepared baking pan.
- Then, add a scoop of brownie batter into the opposite corners. Think of it like creating diagonal lines. You may need to use the back of a spoon or spatula to gently encourage the thick batter into the corners.
- Alternate adding brownie batter and blondie batter in opposite sections of the pan. Alternate the areas so you get nice layers of both batters in the bars.
- Once all the batter has been added to the pan, use a spoon or butter knife to gently swirl the batters together to create a marble pattern on top.
- Bake the bars for 45 minutes at 350°F. Remove the bars from the oven when a toothpick inserted in the center comes out with moist crumbs.
- Allow the bars to cool completely and then slice and enjoy!

- Flour -If you are gluten-free, feel free to swap the all-purpose flour for gluten-free flour in the recipe.
- Sugar-Free - Feel free to use your favorite sugar-free swap in the recipe to replace the white and brown sugars.
Variations
- Nuts - Feel free to add some chopped walnuts to the recipe to give it more texture!
- Peanut Butter - These would be great with peanut butter! Feel free to add some peanut butter to the brownie batter!
- Serve With Ice Cream - Serve theses brownie blondies over some ice cream to really turn it into a decadent dessert!
