I feel like an old lady when I say I just recently got into Tik Tok. I'm just on the cusp of 30 and I feel so out of touch with youth these days! I recently came to enjoy everything Tik Tok, from the hilarious videos to the great recipe ideas. When I came across these viral Cookie Monster Cookies, I knew that I had to make them. These cookies are so fun and easy to make! They are perfect for adults and kids alike and so fun to bring to parties and events. These cookies were a hit!

Ingredient Notes
- Vegan Mini Chocolate Chip Cookies- These cookie monster cookies are stuffed with chopped-up mini chocolate chip cookies. I kept them dairy-free by using mini Enjoy Life cookies but you can also use mini Chips Ahoy if you don't care about the dairy.
- Chocolate Chips- These cookies are also filled with chocolate chips. Make sure you get dairy-free chocolate chips. Again, I love using the Enjoy Life Brand or the Trader Joe's brand.
- Vegan Butter Sticks- These cookies are fluffy and buttery, the key is using vegan butter sticks. I love using the Earth Balance Brand, however, feel free to use whatever vegan butter you have on hand.
- Flax Eggs- These cookies have a lot going on so they need a binder to hold them all together. That is where the flax eggs come in! Flax eggs are just a mixture of flaxseed and water. It is one tablespoon flaxseed to two tablespoons water and that counts for one egg. In all my testing, I have found flax eggs to be the best egg substitute in vegan baking.
- Blue Food Coloring- These wouldn't be cookie monster cookies without being blue, right? Grab some blue food coloring, I used the gel kind and give these a fun colorful spin!

Instructions
- Cream together the butter and the sugars until fully combined and no clumps remain.
- Add the flax eggs and vanilla, and cream together until smooth.
- Add the flour, baking soda, and salt and stir until a thick cookie dough is formed.
- Chop the oreos and mini chocolate chip cookies and fold them and the chocolate chips into the cookie dough batter, being careful not to break everything up.
- Refrigerate the dough for 2-4 hours or overnight.
- Preheat the oven to 350 degrees. Remove the cookie dough from the fridge.
- Scoop large balls of cookie dough (I just used a large spoon) onto the baking sheet. Using the back of the spoon or your thumb, press an indent into the center of the cookie dough and place the oreo.
- Top with extra cookie dough over the oreo. Form the dough into a ball around the oreo. Be sure it is completely sealed inside. Make sure to space the cookies about 3 inches apart.
- Bake for 12-14 minutes until the cookies are just set in the middle.
- Allow the cookies to cool for 10 minutes on the baking pan before transferring them to a wire rack to finish cooling.
Hint: Make sure to chill the cookie dough. If you don't chill the cookie dough long enough, it will spread and you will have a big mess.
Substitutions
- Flax Egg - The flax egg can be substituted for your favorite egg replacer, or if you aren't dairy-free, you could use 2 eggs.
- Blue Food Coloring - If you don't want to use food coloring, you don't have to. It can easily be omitted.
- Gluten-Free - Use Gluten-Free flour and gluten-free Oreos to make this recipe gluten-free.
Variations
- Candy - Swap the Oreos for your favorite candy for a fun twist!
- Candy Eyes -Make these cookies actually look like the Cookie Monster by using candy eyes for a fun decorative idea!
- White Chocolate - Feel free to swap the chocolate chips for white chocolate chips for a richer, creamier bite.

Store the cookies in an airtight container for 3-4 days. I like to reheat my cookies up for 30 seconds in the microwave if eating them at a later time.
