Instructions
Pie Dough
To make the pie dough, add the flour, coconut sugar, and salt to a large bowl and mix until combined. Dice the cold butter into cubes and either using a food processor or clean hands, cut the butter into the dough. You want the mixture to have a coarse texture similar to breadcrumbs.
Once the butter is incorporated, drizzle the ice-cold water over the flour and butter mixture. Mix until combined and fully incorporated. Be careful not to over mix. You will know that the dough is ready when you pinch it and it holds together. Using a sharp knife, cut the dough in half and form two discs. Wrap and refrigerate for 30 minutes or up to an hour.
Salted Caramel
Place the coconut milk, coconut sugar, and vanilla extract in a pan and bring to a light boil, and stir frequently for 20-25 minutes.
The sauce will become thick and turn a dark brown caramel color Add between 1-2 teaspoon sea salt, taste, and add accordingly.
The sauce will thicken to the desired consistency as it cools.
Filling
While the dough is resting, make the filling. Dice the apples and in a Dutch Oven, add the apples, sugar-free cider, and spices. Cook for about 5-7 minutes over medium heat until the apples are slightly tender.
Assembly
Using a floured surface, roll out the first pie dough and add it to an 8-inch pan. Using a spoon, scoop the filling into the crust. Top with the ¼ cup of salted caramel and then the remaining pie crust. You can either do a full crust or a lattice top.
To lattice a pie, first cut dough into strips. Lay 6 strips vertically and evenly spaced on top of the filled pie. Fold every other strip back so they’re almost falling off of the pie. Lay one of the 6 unused strips perpendicular on top. Unfold the 3 vertical strips back so they lay over the perpendicular strip. Complete until you have done all of the strips. Drizzle with additional salted caramel.
Bake at 375 degrees for 45 minutes.
Hint: I always leave the skin on my apples, it is so nutritious! I also use this apple slicer to speed up the process!

FAQ's
No, unfortunately this recipe is not keto friendly, you can easily substitute it by making your pie dough out of a low carb alternative flour like almond flour!
If you fill your pie up to the brim and still have leftover filling, save it for later and make vegan apple pie oatmeal!
Refined sugar comes mostly from cane, sugar beets, and corn which are heavily processed to isolate the sugar. Common refined sugars are white cane sugar, brown cane sugar and High Fructose Corn Syrup.
Refined sugars are different from natural sugars found in whole fruit and vegetables because they provide little to no nutritional value. When consumed, refined sugars spike blood sugar due to how quickly the body digests and absorbs it.
Equipment
Equipment can have a big impact on how a recipe turns out. I use glass pie pans as stone pans take longer to heat up and retain more heat. I find I get a much more even baking with glass pans. Additionally, this is the food processor I use to make the pie dough and I store the salted caramel in these jars.
Storage
Store the pie in the refrigerator for up to four days.
If you are freezing the pie, freeze it unbaked. Right before the step, you would bake it, cover it in tinfoil and plastic wrap, and freeze for up to three months. To cook from frozen, allow the pie to thaw and then bake as normal.
Top tip
Don't overcook your apples, you want to add texture and for them not to become mush. The key to doing this is to just cook them until everything is warmed through and they start to soften just a little.
