Who doesn't love Thanksgiving?? For me, I have a love/hate relationship with Thanksgiving. I love the part about sharing food, and spending time with family and love cooking a huge meal and having a lot of leftovers! The part that I hate about it is just the history surrounding Thanksgiving and the fact that we are basically celebrating colonialism and the taking of land away from Native people. My major in college was Native American History so I have a soft spot for preserving Native culture, land, and heritage.
Anyways, I digress, you didn't come here to listen to a rant on why we celebrate this holiday! You came here for this delicious Dairy-Free Green Bean recipe! Growing up, my family never really made green bean casserole for Thanksgiving. It was typically a dish that was brought by friends or family members to our gathering. All I know is, I freaking loved it. There is something about canned, uber processed food baked and topped with crispy fried onions. It is so unhealthy but so delicious that I would take helping upon helping. As I got older and realized that my favorite Thanksgiving dish was not the best for me, I set out to find a way to make it healthier and still delicious. This recipe has become a staple on our table and you would be shocked that it tastes identical to the classic!

Ingredients
The ingredients in this recipe are so easy you will be blown away!
- Fresh Green Beans
- Sliced White Mushrooms
- All-Purpose Flour
- Soy Milk
- Fried Onion Pieces
- Onion Powder
- Garlic Powder
- Salt
- Pepper

Instructions
Oven Instructions
Preheat the oven to 350 degrees.
Finely dice the mushrooms and saute them over medium heat to reduce some of the moisture. Saute for about 5 minutes. The reason you are cooking the mushrooms is to get the flavor of the canned soup, we want to bring out the umami flavor.
In a separate bowl, add the soy milk, all-purpose flour, and seasonings, and using an immersion blender, blend until the mixture is combined.
Add the liquid mixture to the mushrooms and stir over medium heat until thickened, about 2-3 minutes.
Once the mixture is thickened, add back to the bowl and set aside.
If your green beans are not washed or trimmed, make sure to do so. I like to make sure that my green beans are bite-sized so I always snap them into bite-sized pieces.
Bring a gallon of water and 2 tablespoons of salt to a boil in a dutch oven. Add the beans and blanch for 5 minutes. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside.
In a 9x13 casserole dish, add the green beans, the condensed soup mixture, and half of the fried onions.
Top the casserole with the remaining fried onions and bake for 30 minutes.
Crockpot instructions
Add the blanched green beans to the slow cooker, in a medium-sized bowl, whisk the soy milk, flour and spices.
Pour the mixture over the beans and half of the onions.
Place the lid and cook on HIGH for 2½ hours.
Brown the remaining canister of onions in a skillet on the stovetop.
Sprinkle the onions over and serve.
Hint: I like to use the least about of dishes as possible to not have to have a massive clean-up. I just stir everything together in the dish that it will be baking in.
Substitutions
- No Mushrooms - If you aren't a fan of mushrooms, you can make this vegan green bean casserole without them. Make the cream sauce as written but omit the mushroom step. To give the umami flavor, add 1 teaspoon of soy sauce.
- Low- Sodium - omit the salt in this recipe to lower the sodium amount. You can even make your own fried onions if you are concerned about the sodium level.
- Soy-Free - If you don't like soy milk or cannot tolerate it, feel free to use any type of plant milk that you wish! Just make sure it is unsweetened.
Variations
- Spicy - add chili pepper flakes while cooking to imbue heat into the dish
- Cashew Cream - Make this vegan green bean casserole with cashew cream instead to make it extra creamy!
- Kid-friendly - Make sure to snap those green beans kid-sized!
