Who doesn't love a good one-pot recipe? I know that I do! One-Pot or pan, in this case, recipes make for an easy meal and easy cleanup. This Dairy-Free Southwest Frittata is the perfect recipe for when you want to have a good vegan meal but you are crunched for time. Filled with delicious Southwest flavors and vegetables, this Frittata has quickly become a family favorite in our house. We have even fought over who gets to eat the leftovers!

Why This is the Best Dairy-Free Frittata
- One-Pan Meal- Cleanup is a breeze with this recipe as you only have to clean one pan and a cutting board. It is perfect for when you have a long day ahead of you and you just want to make everyone something easy for breakfast.
- Easy Prep- The prep for this recipe is so simple. It is just chopping some vegetables and vegan sausage. It couldn't get any easier. You don't even have to crack eggs as this is egg-free!
- Full of Delicious Flavors- Southwest flavors are some of my favorite and I love all the Southwest, smokey flavors in this dish. It is the perfect flavor burst!
Ingredient Notes
- Just Egg- The base for this recipe is the Just Egg. Just Egg is my favorite egg replacer. In my opinion, it tastes exactly like eggs but it is cruelty-free and made from mung beans! You can find it at almost any supermarket these days. I normally get mine from Target!
- Vegan Sausage- I also love to chop up some vegan sausage patties and throw them in this frittata. I love Beyond Meat's breakfast sausage patties that I chop up into bite-sized pieces. However, you can use whatever vegan sausage is your favorite.
- Vegan Cream Cheese-The key to making this frittata super creamy is the vegan cream cheese. I am a sucker for the Kite Hill Chive Cream Cheese. However, feel free to use whatever vegan cream cheese you can find or omit it altogether.
- Vegetables-This recipe uses, onion, bell peppers and mushrooms as the main vegetables, feel free to use whatever you have on hand or switch it up some!

Instructions
- Preheat the oven to 375 degrees
- Dice the bell peppers, onions, mushrooms, and, vegan sausage
- In an oven-safe skillet, sauté the onions and bell peppers over medium heat until soft. About 5 minutes.
- Add in the mushrooms and sauté for another 3 minutes until the mushrooms start to lose their water content and shrink down.
- Add in the vegan sausage and stir to combine.
- Top the frittata with vegan cream cheese
- In a measuring cup, pour the Just Egg and spices and stir to combine. Pour the egg mixture over the vegetable mixture in the skillet.
- Bake for 1 hour or until the center is no longer jiggly. Serve immediately
Hint: I love to use my cast-iron skillet for this recipe, even though it is pretty much non-stick at this point, I still give it a good spray down with some cooking spray because we don't want the egg to stick.
Substitutions
- Tofu - If you don't like Just Egg or can't find it, you can swap the Just Egg for Tofu. It will require additional work and prep but it is an easy substitution. Just add silken tofu, non-dairy milk, nutritional yeast, and the Southwest spices to a blender and blend until smooth. Use as you would the Just Egg.
- Low Sodium - If sodium is a concern for you, I would omit the vegan sausage and keep this entirely plant-based
- Vegan Cream Cheese - The vegan cream cheese is recommended but optional, it gives the dish a creaminess that eggs give but if you can't find it or don't like vegan cream cheese, feel free to leave it out.
Variations
- Different Vegetables - Try adding whatever vegetables are in season to this dish. I love adding squash and zucchini when I make this in the Summer!
- Fresh Herbs - I love the addition of fresh herbs to this recipe. They add such brightness!
- Cheese - Toss in some shredded vegan cheddar to the mix to give it a delicious cheesy flavor!
