Summer is here! With the arrival of Summer, my garden is bursting at the seams with fresh vegetables. For the first time this year, I planted a salsa garden. I have fresh tomatoes, cilantro, and peppers all ready to harvest. I also happened to have a mango in my fridge that was super ripe. I thought, why not make a spicy mango salsa??
This Mango Habanero Salsa is the perfect fun appetizer to serve on a warm day. Eat it by the pool or in the comfort of your air conditioning, you won't want to miss out! The heat of the habaneros pairs perfectly with the sweetness of the mango. It is the best combination! Hurry and grab your ingredients, you won't want to miss this!

Ingredient Notes and Substitutions
- Roma Tomatoes- Roma tomatoes are the best tomatoes for salsas because they have a lower water content, less gel, fewer seeds, and meaty flesh. However feel free to use whatever tomato you have on hand.
- White Onion- White onions are softer and milder than yellow and red onions, they have thin, papery skins and, while still sharp, have less of a lingering aftertaste.
- Cilantro- Cilantro comes in and adds great flavor to this recipe. However if you are one of those people who find the taste of cilantro "soapy" feel free to leave it out.
- Mango- I used fresh mango in this recipe and have not tried it with frozen or canned mango so I cannot recommend it.

Instructions
Quick Overview
- Add tomatoes, peppers and onion to a baking sheet and broil until charred.
- Add the vegetables along with the remaining ingredients to a food processor and blend until smooth.
Step 1: Cut the habaneros in half and remove the seeds. Add them to a baking sheet. Cut the tomatoes and onion in half and place on the baking sheet with the peppers
Step 2: Add the vegetables to the oven and broil on high until charred and blistered. About 5 minutes.
Step 3: Place the roasted vegetables, mangoes, cilantro, salt, garlic, pepper cumin, and lime in the bowl of a food processor or blender.
Step 4: Blend until smooth. Serve warm or chill overnight.
Hint: If you want to make your salsa spicier, feel free to leave the seeds in the habaneros!
Variations
- Extra Spicy - Leave the seeds in the habanero to kick the heat up a notch!
- Bell Peppers - Give this salsa a little more body by adding a red and green bell pepper!
- Pineapple or Peach - Try swapping the mango for pineapple or peach to give it more of a flair!

Storage
Store leftover salsa in the refrigerator in an airtight container for 3-4 days. This is also the perfect make-ahead dish as it becomes more flavorful as it sits. I like to make mine a day before I plan to serve it!
I do not recommend storing leftover Mango Habanero Salsa in the freezer.

- Taste and adjust the flavors. It is always key to taste your recipe before serving. If needed, add more salt or lime to taste.

- Handling the peppers can cause a burning sensation on your skin. I encourage you to wear gloves while cutting these up.
