This easy vegan fajita bowl is the perfect weeknight dinner recipe! It is so easy and quick to make and the whole family will love it!

Do you ever have those days where works seems so long and you get home and don't have the energy to make anything for dinner? This Easy Vegan Fajita Bowl is exactly what it sounds like, easy! This is the perfect weeknight dinner to make any day of the week! This is the perfect sheet pan dinner and everything comes together in about 40 minutes. This will be a new family favorite!

What Makes This Vegan Fajita Bowl The Best
- Easy Cleanup- A sheet pan does the majority of the work making this the perfect easy cleanup after a busy day!
- Under 10 Ingredients- With under 10 ingredients this meal is easy and budget friendly. It is also whole-food and plant-based.
- Fresh and Filling- With beans as the protein base, this this vegan fajita bowl is fresh and filling. With bright herbs like cilantro and fresh acidity from the limes, you won't want to miss out!
Ingredient Notes and Substitutions
- Cilantro Lime Rice- The base of the Vegan Fajita Bowl is this Cilantro Lime Rice. It is easy to make and you can make it directly in the rice cooker with minimal hands on time.
- Fajita Vegetables- Fajita Vegetables consist of bell peppers and onions. I like to add extra vegetables such as sweet potatoes and corn. Feel free to add whatever vegetables you want!
- Black Beans- I keep this recipe simple by using black beans as the main source of protein in this recipe. Black beans are packed with nutrients and filling! If you don't like black beans, feel free to swap them with pinto or leave them out entirely.

Instructions
Step 1: Peel the sweet potatoes and dice into bite-sized pieces
Step 2: Thinly slice the onion, bell pepper, and mushrooms. Add them to the bowl with the sweet potatoes.
Step 3: Add the black beans and corn. Toss the vegetables in the olive oil and seasonings to coat.
Step 4: Pour the mixture onto a parchment-lined sheet pan. Spread the vegetables out so they fully cover the sheet pan being careful not to crowd it. Bake at 425 for 30 minutes.
Step 5: While the vegetables are in the oven, assemble the cilantro lime rice.
Step 6: Create the fajita bowls by layering the rice, vegetables, and desired toppings. Enjoy!
Variations
- Extra Vegetables- Feel free to add whatever your favorite vegetables are to bulk this up!
- Quinoa - Ditch the rice and make this with quinoa to keep it nutrient dense and give it a fun variation.
- Taco Meat- If you want to make this high-protein, you can add some vegan taco meat to the dish alongside the black beans. My Vegan Taco Salad uses a chickpea and walnut taco meat that is delicious!

One of the things that I love about these vegan fajita bowls is that they store so well. This is one of my go-to meal prep recipes. I portion everything out into individual glass containers and eat it for lunch throughout the week!

- Try not to overcrowd the sheet pan or you will end up steaming your vegetables instead of roasting them.
- You can easily swap the spices for a package of taco seasoning. I just like to use spices so I can control the amount of salt that I put in.

For the Burrito Bowl
- 1 batch Cilantro Lime Rice
- 1 Red Bell Pepper
- 1 Orange Bell Pepper
- 1 Green Bell Pepper
- 1 Red Onion
- 1 cup Mushrooms
- 1 can Black Beans drained and rinsed
- 1 can Corn Drained and rinsed
- 2 Small Sweet Potatoes
- 2 Tablespoons Olive Oil
Fajita Seasoning Mix
- 1 teaspoon Chili Powder
- ½ teaspoon Cumin
- ½ teaspoon Kosher Salt
- ¼ teaspoon Smoked Paprika
- ¼ teaspoon Onion Powder
- ¼ teaspoon Garlic Powder
- ½ teaspoon Oregano
- ⅛ teaspoon Cayenne Pepper
