This Fiesta Tater Tot Vegan Casserole is the perfect quick and easy dinner. Now that Summer has ended, it seems like things just pick up the pace around my house. We don't have any children going back to school but we have a lot of friends that do. This is the perfect recipe to make on a school night that comes together quickly. Everyone is sure to enjoy this delicious dinner! It is a one-pot dinner that you can have on the table in 30 minutes. Not only is this dinner quick and family-friendly, but it also freezes perfectly and is the perfect meal to gift for a meal train or freeze for stocking up!

Why This is The Best Tater Tot Vegan Casserole
- Easy to Make- This Tater Tot Casserole is seriously easy to make. It only takes 30 minutes to have it from the stove to the table and is perfect for those hectic days.
- Family Friendly- The whole family is guaranteed to love this dinner. What kid doesn't love tater tots? It is one of those meals that I like to call "stealthy healthy" because you sneak in good ingredients like beans and vegetables and still get a delicious dish!
- Budget Meal- This is the perfect budget meal as it is under 10 ingredients and you can get most of them at your local grocery store!
Ingredient Notes
- Tater tots- The tater tots act as the topping to this dish so they are a vital component. Any tater tots will do, I personally used the Target brand for myself because they were the cheapest.
- Taco Seasoning- We make this recipe really simple by using pre packaged taco seasoning. You can find most for under a dollar. I personally love Siete seasoning, it is Gluten-Free, Vegan, Paleo and Whole30.
- Impossible Meat- To give this dish a "beefy" flavor, we are using plant-based impossible meat. Any vegan beef grounds will do.

Instructions
- Preheat the oven to 425 degrees.
- Dice the onion and add to the skillet with the impossible meat and 1 tbs olive oil. Cook the impossible meat until no longer pink.
- Drain and rinse the cans of black beans and corn and add them and the tomatoes and diced chilis to the pan.
- Stir everything until combined. Add in the taco seasoning and stir until combined.
- Layer the tater tots on top of the filling, covering the entire expanse. Bake for 25 minutes.
Hint: Make this a one-pot meal by using an oven-safe pan. I love my cast iron skillet, I use it for everything!

- Low-Sodium - Cut the sodium in this recipe in half by using sodium-free taco seasoning or make your own!
- Keto - Omit the beans and use cauliflower tots, check out a quick and easy recipe for them here
- Nightshade-free - omit the tomatoes but add ¼ cup of water so the seasoning does not stick.

Yes, you can freeze this casserole. Assemble the casserole and do not bake it. Wrap it tightly in plastic wrap and tin foil and freeze for up to three months. When ready to eat, let the casserole come to room temp and then bake for 30 minutes or until warmed through.

- Depending on which taco seasoning you use, it could thicken up your mixture as most do contain some kind of thickener. If your mixture gets too thick and gummy, add ¼ cup water and stir and it will loosen everything back up again.
