This Vegan Skillet Lasagna is the easiest and most delicious dinner for a busy weekday. This dinner will have the whole family raving!
Who doesn't love this time of year? I don't know about you, but I live in a place where we have really hot Summers. Hot weather is not my jam, so when the cooler season rolls around, I am so here for it! I love all the cozy recipes that come with this time of year. I also find that as we are approaching the holidays, life tends to get really busy! That is why this Vegan Skillet Lasagna is perfect.
This recipe is cozy, delicious, and perfect for those busy weekdays when you feel like you just can't catch up with life. This dinner is also super healthy and full of whole foods! The whole family will love this and kids won't even know that they are eating something super good for them! I like to call these recipes stealthy healthy because they are just so good you would never guess they are good for you!

Ingredient Notes:
- Firm Tofu- The tofu in this recipe is used to make the vegan ricotta which will act as the cheese for the lasagna. If you aren't a fan of tofu, you can swap it for 1 cup of Almond Flour.
- Vegan Beef Crumbles- The Vegan Beef crumbles in this recipe give the skillet lasagna a meaty texture. However if you prefer to keep things less processed, you can make this skillet lasagna with green lentils instead.
- Gluten-Free fusilli-I used gluten-free fusilli in this recipe to keep things gluten-free and I like how the pasta holds onto sauce well. However feel free to use your favorite noodles in this recipe.
- Jarred Marinara Sauce- I love keeping recipes simple so I used jarred marinara sauce in this recipe. Feel free to use your favorite jarred sauce or make your own!

Instructions
How to Make the Vegan Ricotta
- In a food processor, combine the tofu, nutritional yeast and lemon juice and pulse until combined. Set aside.
How to Assemble the Skillet
- Preheat the oven to 375 degrees.
- Dice the bell peppers and onion and saute over medium heat with the spices.
- Add the vegan beef and cook until no longer pink. Once the vegan beef is cooked through, set aside.
- Boil the noodles according to the package directions
- When the noodles are finished cooking, drain and add them to the skillet with the vegetable and meat mixture. Add the marinara sauce and stir to combine.
- Using a spoon, add dollops of the vegan ricotta mixture and swirl into the skillet lasagna.
- Bake for 25 minutes
Hint: When working with gluten-free noodles, it is important to not overcook them. If you overcook them they will become gummy or fall apart. This is the brand of noodle that I use and I love. I always follow the directions on the package.
Substitutions
- Extra Vegetables - Make this Cast Iron Skillet Lasagna with spinach and zucchini to really up the vegetable content.
- Dairy - If you aren't vegan but still try to stay away from cheese, try making this lazy skillet lasagna with cottage cheese instead of tofu.
- Creamy - Make this vegan skillet lasagna creamy by adding extra vegan ricotta to the dish. The recipe uses half of the vegan ricotta mixture, but if you want it extra creamy, use it all!
Variations
- Spicy - Make this weeknight skillet lasagna spicy by adding chili pepper flakes while cooking to imbue heat into the dish.
- Deluxe - Top this off with some delicious pesto when serving to make this fancy.
- Low-Sodium - Make sure to omit the salt or use a salt substitute to make this recipe low-sodium.

FAQ's
Sure! If your oven is occupied and you want to make this solely on the stovetop, just pot a lid over the skillet and cook on medium for 30 minutes.
Unfortunately this recipe is not keto if you make it with the ingredients listed. However, that doesn't mean that you can't adapt it to be keto. Use hearts of palm pasta instead of the gluten-free noodles.
If you don't have a skillet, don't worry, you can still make this dish and turn it into a baked lasagna. Use your favorite nonstick or ceramic pan to cook all the ingredients and then add everything to a 9x11 inch baking pan and bake.

Storage
Store the leftover skillet lasagna in an airtight container and keep it in the fridge for up to four days.
I love to store these in individual glass containers and eat them as meal prep throughout the week.
These ingredients don't stand up well to freezing.
Top tip
Make this recipe even easier by using jarred marinara sauce. My favorite clean marinara sauces are Organic Marinara from Trader Joe's or Rao's Marinara.

Gluten-Free and Vegan Skillet Lasagna
Ingredients
- 14 ounces Firm Tofu
- 16 ounces Gluten-Free Fusili
- 1 Jar Marinara Sauce
- 16 ounces Vegan Beef Crumbles
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 1 Yellow Onion
- 1 tablespoon Lemon Juice
- ½ cup Nutritional Yeast
- 1 teaspoon Oregano
- 1 teaspoon Rosemary
- 1 teaspoon Basil
- 1 teaspoon Thyme
- 1 teaspoon Salt
- ½ teaspoon Pepper
Instructions
- Preheat the oven to 375 degrees.
- Dice the bell peppers and onion and add 1 tablespoon of oil to a skillet, Add the vegetables, rosemary, basil, oregano and thyme and saute over medium heat for about 5 minutes or until the bell peppers are tender and the onion is soft.
- Add the vegan beef and cook until no longer pink. If using a different brand of beef crumbles, cook in the pan according to the package directions. Once the vegan beef is cooked through, set aside.
- In a large dutch oven, bring 6 cups of salted water to boil. Once the water is boiling, add the noodles and cook according to package directions. Depending on the pasta that you use, the cooking time will vary so make sure to cook according to the directions.
- While the noodles are cooking, in a food processor, combine the tofu, nutritional yeast and lemon juice and pulse until combined. Set aside.
- When the noodles are finished cooking, drain and add them to the skillet with the vegetable and meat mixture. Add the marinara sauce and stir to combine.
- Using a spoon, add dollops of the vegan ricotta mixture and swirl into the skillet lasagna.
- Add the skillet to the oven and bake for 25 minutes.
