This Grilled Vegan Pizza is loaded with amazing Summer vegetables and full of bold and fresh flavor. This pizza is easy and quick to make and is the perfect recipe to grill on the weekend with the family or surrounded by friends.
This pizza is the best Summer recipe, the flavor that the charcoal grill gives the vegetables is the perfect smoky Summer flavor.
This was inspired by a pizza that my husband and I get at our local pizza joint. We love eating this pizza and I set out to recreate the recipe. We have been enjoying our garden and spending the Summer hanging out in our backyard so I thought that throwing this pizza on the grill would be the perfect weekend dinner! Instructions For Grilled Vegan Pizza
The first step to making this pizza preparing the vegetables. Slice the squash, zucchini, peppers, tomatoes and mushrooms, salt, and Italian seasoning and add them to a grill basket. Grill over high heat for 8-10 minutes stirring periodically.
Roll out the pizza dough and place it on a Lodge Cast Iron Griddle. Bake in a closed grill until the dough starts to bubble and turns golden brown on the bottom side, about 5 minutes. Flip the dough over and spread your olive oil and garlic sauce on top and layer with the grilled veggies. Cook in the closed grill for another 5 minutes
Remove pizza from the grill and top with fresh basil and balsamic vinaigrette.
Hint: If you don't have a grill basket handy, you can use a disposable tinfoil dish. Just poke some holes in the bottom and use as a grill basket.
Substitutions
Here are some common substitutions to make this pizza work for all diet types.
- Gluten-Free and Keto Version- instead of using regular flour-based pizza dough, try using these Zero Carb Lyfe Pizza Crusts. They are made from chicken and you can still grill them!
- Vegetables - feel free to use any vegetables that you have on hand. Eggplant and onions would be a great addition
- Cheese - If you are feeling cheesy, top your pizza with mozzarella before layering on the vegetables and cover and grill until the cheese is melted.
Variations of this Grilled Vegan Pizza
This recipe is super versatile, here are some common variations that you can try.
- Spicy - add some chili pepper flakes on top of the pizza before serving or toss in some jalapeños into the vegetable mix while grilling.
- Deluxe - to make a fancy version of this pizza, try changing the sauce up some, I have tried it with pesto before and it is amazing!
- Kid-friendly - add some cheese and dice up the vegetables small
Finish the night off right with this Vegan Southern Peach Cobbler to make it the perfect Summer night.
Equipment
Equipment can have a big impact on how a recipe turns out. I choose my equipment carefully to make sure that it always suits my needs.
I love Lodge Cast Iron products. They are perfect for camping or using on the grill. I use this griddle to cook the pizza dough on. I also bought this grill basket from Target for $10 and it worked so perfectly. It was nonstick and worked great for the vegetables.
Storage
Store this pizza in the fridge for up to three days, I would not recommend freezing this pizza.
Top tip
The top tip that I would give to you trying out this recipe is to make sure that you cook your pizza dough over indirect heat. I normally cook it over the cooler side of the grill and make sure the grill is hot but there are no flames. With the cover on, my grill will still read around 500 degrees. If you cook the pizza directly over the fire, you risk burning the dough.
