I don't know about you, but it is starting to warm up here in the valley and when that happens it means I don't want to stand in front of the stove for hours on end. Enter these Gyro Fries. They are so bright and refreshing it is a fun burst of flavor on a warmer day. Full of amazing Greek flavors and easy to make, these will be a new family hit!

Why These Gyro Fries Are The Best
- Easy and Quick- These Gyro fries are easy and quick to make. All you have to do is bake the frozen french fries, chop the vegetables and assemble the bowl! It doesn't get any easier than that!
- Fun and Bold Flavor-Greek food has its own special and unique flavor. These fries will be creamy, tangy and delicious!

Ingredient Notes
- Frozen French Fries- To keep this simple, we are using a base of frozen french fries. You can use any type that you like but I prefer the shoestring fries. I find that they don't overwhelm the dish and they get the perfect amount of crispiness!
- Tzatziki Sauce- You can either make your own, or you can purchase some. I make this easy by picking a vegan Tzatziki sauce that they sell at Trader Joe's.
- Fresh Vegetables- The best part about these fries is loading them up with all the fresh vegetables! I like to add lettuce, onion, tomato, and cucumber and then give it a tangy twist with olives and pepperoncini.

Instructions
- Bake fries according to package directions. Arrange them on a 9x13 baking sheet.
- While the fries are in the oven, dice the onion, tomato and cucumber and shred the lettuce. Drain the olives and pepperoncini.
- Add the cooked fries to bowls and top with the lettuce, tomato, cucumber, onion, olives and peppers.
- Drizzle Tzatziki sauce on top and sprinkle the vegan feta on and enjoy!
Hint: Make sure to layer the fries in an even layer to get the perfect cook. If you don't then your fries will not get crispy.
Substitutions
- Tzatziki Sauce -If you can't find store-bought vegan Tzatziki sauce, it is really easy to make your own at home. Check these Falafel Gyros with a homemade Vegan Tzatziki.
- French Fries - You can use any type of frozen french fry that you want or even make your own! I love making these with frozen waffle fries!
- Vegan Feta - If you aren't a fan of vegan cheeses, feel free to leave it out.
Variations
- Gyros - Turn these loaded fries into wrapped gyros for a fun variation. Instead of using bowls, simply load everything up in a pita and enjoy!
- Extra Protein - Feel free to add some chickpeas to the mix to get that extra protein boost!
- Kid-friendly - carefully remove the parchment paper from the baking sheet and transfer the fries to a serving platter or right to the table so that no one burns themselves on the warm edges of the baking sheet.

Storage
Store the leftover fries in an airtight container for up to 5 days in the refrigerator. I like to store the fries separately from the toppings as the toppings will make the fries soggy and impossible to reheat. So I like to store the fries in one container, reheat them in the air fryer and then top them with the fresh toppings.
I would not recommend freezing this recipe. The toppings are best served fresh and I would not recommend freezing the fries as they have already been frozen once and will have an off texture.
Top tips
- Switch up the toppings to suit your family's tastes! My husband loves the zing of the pickled peppers but I am not a huge fan so I leave them out! That is the best part about loaded fries is that everyone can make something they like!
