I don't know about you, but when I was a meat-eater, I loved a good pulled pork sandwich. BBQ has always been a constant in my life. My dad had a smoker and would always smoke tri-tip growing up and when we traveled, we would always land at some really good BBQ places around the country. When I went plant-based, I felt like those days were over. Thankfully for me, I discovered the wonder that is the mushroom. This Mushroom Pulled Pork Sandwich taste exactly like a Hawaiian BBQ Pulled Pork. The texture and flavors of everything are spot on.

Ingredient Notes
- Portobello Mushrooms- I love using portobello mushrooms in this recipe because they have a great meaty flavor to them. I have found them to be the perfect substitute for pork in vegan recipes. If you can't find portobello mushrooms, I also like to use Lion's Mane Mushrooms.
- Sliced Cremini Mushrooms-I add sliced cremini mushrooms to this recipe to really bulk up the recipe. Portobello mushrooms can be a tad on the pricy side so to keep this budget-friendly, I throw in some finely diced sliced cremini's to give the recipe some bulk.
- BBQ Sauce-This recipe goes great with this Tangy and Delicious Pineapple BBQ Sauce. It gives it a burst of fun Hawaiian flavor. However, feel free to use whatever BBQ sauce that you have on hand.

Instructions
- Preheat the oven to 425 degrees. Take the mushroom heads and scoop out the gills on the underside of the mushrooms.
- Add the mushrooms to the oven and roast for 20 minutes
- Let the mushrooms cool enough to handle and using two forks, pull or shred the mushrooms until it resembles the texture of pulled pork.
- Finely dice the cremini mushrooms and add to a skillet with the shredded portobello mushrooms.
- Cook over medium heat until the mushrooms release their water content, about 5 minutes.
- Add the BBQ sauce to the pan and cook for an additional 5 minutes until the sauce has thickened.
- Pile the mushrooms on hamburger buns and top with your favorite toppings and enjoy!
Substitutions
- Jackfruit- You can swap the mushrooms for canned jackfruit if you prefer. Jackfruit is another great meat alternative.
- Gluten-Free-Make sure to use a gluten-free bun and that your BBQ sauce is gluten-free.
- King Oyster Mushrooms- If you don't like portobello mushrooms, another great substitute is King Oyster Mushrooms. They are a great alternative.
Variations
- Korean BBQ- Turn this Mushroom Pulled Pork into a delicious Korean BBQ sandwich by using your favorite Korean BBQ sauce.
- Spicy-Grab a spicy BBQ sauce to make this sandwich extra hot!
