In my recipes, I use flax eggs A LOT. A flax egg is the perfect vegan substitute for eggs. They act as a binding agent in recipes and work to help the other ingredients bind together in a recipe.
A lot of the questions I get around flax eggs are if they are a good 1:1 substitute for regular eggs, if they alter the taste of recipes or if you have to use flax seeds.

What are Flaxseeds?
Flaxseeds are an incredibly nutritious seed that comes from the flax plant. Flax seeds are loaded with nutrients and are high in Omega 3 Fatty Acids as well as being rich in dietary fiber. There is some evidence to support that flax seeds may also improve cholesterol and lower high blood pressure.
Do Flax Eggs Really work?
In my experience, flax eggs work amazing in some recipes but they are defenitly not the solution for each and every vegan recipe.
Flax Eggs work best in:
- Cookie Recipes
- Recipes containing flour with gluten (all purpose or whole wheat)
- Brownies, bars or blondies
Flax Eggs do not work well in:
- Recipes containing more than two eggs
- Flourless recipes
How to make a Flax Egg
To make a flax egg, mix one tablespoon ground flaxseed meal with three tablespoons of water. Mix together, and let sit 10-15 minutes to set up and thicken.
What is the best Flaxmeal to use?
I use Bob's Red Mill Flaxseed meal. I find that it creates the perfect flax egg and I love the quality of Bob's Red Meal Products.
