The Super Bowl is coming up and I don't know about you, but I am really excited for it! Are you a game watcher or are you there for the commercials? For me, it is all about the commercials! That, and the food! There is something special about game day food that is just the best. I could make all the appetizers into a full meal and be happy! This year, I am bringing this Easy Vegan Rotel Dip.
This dip is perfect for a game day and you wouldn't even guess it is only 4 ingredients! This hands-off appetizer makes hosting a breeze, you won't want to miss this one!
This sausage cream cheese dip is a must for any large gathering. Serve it on game day, New Year’s Eve, at your Super Bowl party, on Christmas, for holidays, or any time you need a crave-worthy cheese dip!

What Makes This Vegan Rotel Dip So Great?
- 4 ingredients- This dip only has 4 ingredients which means it couldn't be any easier. Most of the ingredients you will be able to find at your local supermarket.
- Hands-off prep- This dip is perfect because the crockpot does almost all of the work. It couldn't get any easier than that!
- Perfect for sharing- This dip makes a ton so it is perfect for sharing and enjoying with friends!
Ingredient Notes and Substitutions
- Vegan Sausage Crumbles- The Vegan Sausage crumbles in this recipe are key to making this dip. I love using the Impossible Foods brand, however you can use whatever your favorite brand is. You can even use regular vegan beefy crumbles and add seasonings such as fennel and red chili flakes to give it that sausage feel.
- Ro-Tel Diced Tomatoes- Rotel Diced Tomatoes are just tomatoes with green chilis. So if you can't find Rotel, you can swap it with diced tomatoes with green chilis. Use two cans of diced green chilis for 2 cans of diced tomatoes.
- Vegan Cream Cheese- To make this dip extra creamy, we are using vegan cream cheese. I love Kite Hill's chive flavored brand. It is vegan, keto, and paleo which I love. Feel free to use whatever brand you prefer.
- Vegan Queso- Vegan Queso helps to give the dip the cheesy delicious queso feel. You can make your own vegan queso but I like to keep it easy. For this recipe, I used the Good Foods brand.

Instructions
Step 1: In a large skillet, heat the olive oil over medium-high heat. Add the vegan sausage and cook until brown.
Step 2: Add the cooked sausage along with the Rotel tomatoes, cream cheese, and queso. Cook on high for 1-2 hours or low for 3-4 hours until warmed through.

Variations
- Spicy - add in some chopped jalapeños or your favorite peppers with the other ingredients to make this dish extra spicy!
- Extra Cheesy - If you want this dip even cheesier, feel free to add in some vegan cheddar about a half-hour before serving.
- Extra Creamy- If the dip is too thick for you, add more vegan queso to make this dip extra creamy!
Storage
Store leftover sausage dip in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or in a crockpot to warm it through before serving again.
These ingredients don't stand up well to freezing.

- Corn chips and tortilla chips are always a good idea with Rotel sausage dip. You could also serve this with bread slices to add even more delicious carbs to the mix. Carrot chips, celery, or broccoli are all also great options if you’re looking to add some more vegetables to your day.
- DON’T drain the Rotel. A little bit of liquid is essential for thinning out this sausage and cream cheese dip enough to be scoopable.
- Try cubing up the vegan cream cheese before adding it to the crockpot. It will make it easier for the cream cheese to melt into the sausage.
