We are in the middle of a giant heatwave here in California. It was 105 degrees yesterday and sweltering! I am not a huge Summer person, I would much rather be wearing a sweater sitting in front of a heater but unfortunately, I have a few months left before we can get there. One of the things that help to make this miserable Summer heat tolerable is popsicles! There is nothing quite like having a cool and refreshing popsicle on a hot day. It brings me right back to my childhood. These homemade lime popsicles are so easy to make and SO refreshing! You won't want to miss out!

Ingredient Notes
- Limes- The lime juice and zest in these popsicles give this a bright and refreshing flavor bringing you right back to the tropics!
- Cane Sugar- Citrus juice can be pretty tart, the sugar helps to mellow out the tartness in the recipe. Make sure to use organic or vegan sugar as not all cane sugars are vegan.
- Full-Fat Coconut Milk-I really wanted to make these popsicles creamy and not icy. To make them creamy, the base is full-fat coconut milk from a can. The result is a perfectly creamy popsicle that is bursting with fresh citrus flavor.

Instructions
- Peel the limes and cut the peel into 1-inch strips.
- In a small saucepan, combine the coconut milk, sugar, lime juice, and lime peels, and bring to a boil and then reduce to a simmer, stirring frequently, until the sugar has dissolved about 5 minutes.
- Remove from heat and let cool to room temperature.
- Pour into popsicle molds and freeze until solid for 4-5 hours, depending on the size of the mold.
Hint: Adding the lime peel to the saucepan will help give the popsicles even more lime flavor!
Substitutions and Variations
- Coconut-Free - If you prefer your popsicles a little on the icier side, feel free to swap the coconut milk for water!
- Boozy - After removing from heat, stir in two shots of your favorite tequila to make these popsicles boozy!
- Orange Creamsicle - Swap the limes for orange juice and zest to turn these into dreamy orange creamsicles.

Yes! These lime popsicles are much healthier than store-bought popsicles! These popsicles only have 3 ingredients which makes them clean and kid-friendly!
Most store-bought popsicles will contain citric acid that will give them the distinctive citrus "bite." However, these homemade popsicles do not contain citric acid.
You can easily make these popsicles without molds. Simply fill up small disposable cups about halfway and add a popsicle stick in the center and freeze!
