One of the things I love most about Summer is all of the abundant fresh vegetables. I have 4 tomato plants currently growing in my backyard and I can't wait to harvest a bounty this year! Another thing that I love about the warmer weather is that it means that it is officially salsa season! I love a good fresh salsa and this mango pico de gallo is just that! It is bursting with bright flavors and is so refreshing, you will love it!
This mango pico de gallo is the perfect combination of sweet and spicy with the freshness of the mango and the heat of the jalapeño making the perfect balanced salsa.

What Makes This Mango Pico de Gallo So Great?

Ingredient Notes and Substitutions
- Roma Tomatoes- Roma tomatoes are the best tomatoes for salsas because they have a lower water content, less gel, fewer seeds, and meaty flesh. However feel free to use whatever tomato you have on hand.
- White Onion- White onions are softer and milder than yellow and red onions, they have thin, papery skins and, while still sharp, have less of a lingering aftertaste.
- Cilantro- Cilantro comes in and adds great flavor to this recipe. However if you are one of those people who find the taste of cilantro "soapy" feel free to leave it out.
- Mango- I used fresh mango in this recipe and have not tried it with frozen mango so I cannot recommend it.

Instructions
Quick Overview
- Dice the tomatoes, mango, onion, jalapeno and cilantro.
- Add all of the ingredients into a mixing bowl.
- Toss until well combined.
- Taste and add more salt or lime juice if needed.
Step By Step Instructions
Step One: Finely dice the mango, tomatoes, and onion.
Step Two: Using gloves, slice the jalapeños in half and remove the seeds. Finely dice and add to the bowl with the cilantro.
Step Three: Add the lime juice, salt, and pepper.
Step Four: Mix well, taste, and add more lime juice or salt as needed. Serve with your favorite chips!
Hint: Try using a chopper to chop the vegetables quickly!
Variations
- Extra Spicy - Swap the jalapeno for something with more heat like a habanero!
- Avocado - Make this Pico de Gallo extra creamy by adding some avocado to it!
- Pineapple or Peach - Try swapping the mango for pineapple or peach to give it more of a flair!

Storage
Store leftover pico de gallo in the refrigerator in an airtight container for 3-4 days. This is also the perfect make-ahead dish as it becomes more flavorful as it sits. I like to make mine a day before I plan to serve it!
I do not recommend storing leftover mango pico de gallo in the freezer.
Top tips
- Make sure to use ripe mangoes. To tell when a mango is ripe, there should be a little give when squeezed. It should be slightly soft. Just like other fruit, riper mangoes will have a more intense and sweeter flavor.
- Taste and adjust the flavors. It is always key to taste your recipe before serving. If needed, add more salt or lime to taste.
- If you don't like spice, you can omit the jalapeno or swap it for green bell pepper.
FAQ's
Pico de gallo is chunkier then salsa and consists of finely diced vegetables. Salsa on the other hand is much smoother and often the vegetables are blended together to make a sauce.
Texture! When you have a lot of different textural elements to a dish, you will find that it will increase the flavor profile of the overall dish.
