These easy vegan pumpkin chocolate chip cookies are everything good about Fall and pumpkin flavors. These cookies couldn't be easier to make and are showstoppers. Soft and fluffy, bring to your next gathering, and your friends and family will all be asking for the recipe!

Ingredients
The ingredients in this recipe are easy to find and all plant-based. You should be able to find them all at your local grocery store.

- Brown Sugar
- Salt
- Baking Soda
- Vanilla Extract
- Pumpkin Puree
- Vegan Butter
- Chocolate Chunks

Instructions
Preheat oven to 350 degrees. Using either a stand mixer or a hand mixer, cream together the butter and sugar until well incorporated. In a separate bowl, combine the flour, baking soda, and salt and set aside.
Add the pumpkin puree and vanilla extract to the bowl with the butter and sugar. Stir until well incorporated.
Slowly add in the flour mixture in one cup increments and fold until incorporated. Fold in the chocolate chunks.
Using ¼ measuring cup, measure out the cookies and roll them into a ball, and place them on a baking sheet. These cookies will spread so make sure to space them far enough apart.
Bake for 20 minutes and then transfer to a cooling rack to cool completely.
Hint: These cookies spread a lot so I like to only put six cookies on the baking sheet at one time. I use these handy baking mats to line my baking sheets!

- Keto - Use almond flour, swerve, and sugar-free chocolate chips!

Equipment
Equipment can have a big impact on how a recipe turns out. I use aluminum baking sheets and silicone baking mats. I love how the mats are non stick and the cookies just slide right off!
Storage
Store these cookies in an airtight container on the counter for up to five days.
To freeze these cookies, scoop out the dough and place it on a baking sheet and freeze until solid. Once the dough is frozen, remove the baking sheet and place the balls into a freezer bag and keep for up to 3 months.
Top tip
Make sure to buy pumpkin puree and not pumpkin pie filling! The cans can look similar but we want pure pumpkin for this recipe, make sure to always read the labels!
