How do you feel about holidays? I love holidays. For me, it means one extra day off work and I will take that whenever I can get it! I also love holidays because they are so festive and fun! Most holidays have their color scheme or traditions and I love it. These Red, White, and Blue Sprinkle Cookies are perfect for America's Birthday! As a history major in college, I have a soft spot for the 4th of July holiday and get excited for the fireworks and the celebrations. These cookies are the perfect dessert to bring to your 4th of July party and celebrate with everyone!

What Makes This Recipe So Great?

Ingredient Notes
- Powdered Sugar- The powdered sugar helps to give the cookies a chewy and soft texture. The powdered sugar helps to absorb the moisture of the batter.
- Sprinkles-Sprinkles are not always vegan. Most of them contain shellac in them which contains an insect ingredient. There are plenty of vegan sprinkle brands out there, I love getting mine from Sprouts.
- Canola Oil- The canola oil adds fat and liquid to the cookies. You can swap it for extra vegan butter if you prefer.
- Flax Egg- Flax Eggs are the binder in this recipe. I feel that flax eggs are the best vegan egg replacement. To make the flax eggs, add 1 tablespoon of ground flaxseed to 2 tablespoons of water. That will make one egg.

Instructions
- Preheat the oven to 350 degrees
- Cream together the butter and sugars until fully combined
- Add the flax egg, canola oil, and vanilla extract and stir to combine
- In a small bowl, stir together the dry ingredients
- Slowly stir the dry ingredients into the wet ingredients and stir until combined.
- Add the sprinkles to the bowl and mix well.
- Stop, scrape down the sides of the bowl, and using a cookie scoop, 1 tablespoon measure, or your hands, form approximately 12 equal-sized mounds of dough, roll into balls, and flatten slightly.
- Bake for 10 minutes
Hint: These cookies spread quite a bit and the texture will be very thin. Make sure to use only 1 tablespoon scoops or else you will have giant cookies!
Substitutions
- Powdered Sugar - You can leave the powdered sugar out and replace it with white sugar if you prefer, however your cookies won't have that distinctive chewy texture.
- Canola Oil - If you don't like canola oil, you can swap it for a different oil such as coconut oil.
- All-Purpose Flour - While this recipe uses all-purpose flour, you can make it gluten-free by swapping it with gluten-free flour.

- Mardi Gras - Switch up the sprinkles with purple, yellow and green to make this a fun Mardi Gras dessert!

I recommend folding the sprinkles into the batter before cooking. If you try to put the sprinkles on the cookies after baking, they will just slide off and not stick unless you have a binder such as frosting.
Yes, these cookies will spread a lot, they are supposed to be thin and chewy. That is why I recommend using only 1 tablespoon scoops instead of 2 tablespoon scoops.
Yes, you can freeze these vegan sugar cookies. Place 1 tablespoon balls on a cookie sheet and flash freeze in the freezer. Then, add the frozen cookie dough balls to a gallon-sized ziplock bag and freeze for up to 6 months.
