This Easy Vegan Sausage and Crescent Roll Breakfast Casserole hits on all of those notes! It is the perfect savory and filling casserole for those mornings when you just don't feel like putting in a lot of effort but want a killer shareable dish. Doughy crescent rolls topped with sausage and vegan eggs, this hearty casserole will make all of the family happy!

Why This is The Best Sausage and Crescent Roll Breakfast Casserole
- Plant-Based- This breakfast casserole is plant-based and egg-free. It is perfect for vegans as well as those who have an egg allergy. This recipe uses Just Eggs which are made from mung beans and are the perfect egg replacement.
- Easy to Make- This recipe couldn't be easier to make. The prep time is less than 5 minutes and then you plop it into the oven to bake.
- Perfect for Meal Prep- This breakfast casserole is perfect for meal prep because it will last up to 5 days in the refrigerator. I love to store it in individually portioned glass containers and then just bring it to work with me and reheat it in the microwave.
Ingredients
- Just Eggs- To make this casserole egg and, dairy-free, we use Just Eggs. Just Eggs are made from Mung Beans and are vegan and gluten-free. You can find Just Eggs at your local grocery store and I recently saw them pop up at Target! If you are having trouble, you can use the store locator here.
- Plant-Based Sausage- For this recipe, I used Beyond Meat Classic Sausage Patties. I love this sausage because it is a seriously delicious dupe for the real thing. I have served this to my meat-loving dad and he couldn't tell the difference. If you aren't a fan of these sausage patties, feel free to use whatever your favorite vegan ground sausage is!
- Crescent Rolls- The base of this casserole is crescent rolls. Did you know that most of the crescent rolls that you find in the store are vegan? I got mine from Trader Joe's but you can also use Pillsbury which is vegan.
- Vegan Cream Cheese- While it might seem like an odd ingredient, the vegan cream cheese in this casserole is perfect because it lends a creamy element and depth of flavor. I like to use Chive flavored cream cheese from Kite Hill which is my favorite brand.
- Vegetables- For this recipe, I used diced bell peppers, however, feel free to load this up with whatever vegetables you love!

Instructions
- Preheat the oven to 375 degrees
- Dice the plant-based sausage, bell peppers and green onions
- Spray a 9x13 inch casserole dish with non-stick spray
- Unroll the crescent dough and lay on the bottom of the baking dish
- Top with diced green onions, sausage and, diced bell peppers
- Dollop cream cheese over the top of the casserole
- Mix the Just Eggs and spices and pour over the top of the casserole
- Bake for 1 hour and 15 minutes until the casserole is no longer jiggly.
Hint: You will know that the breakfast casserole is baked through when you insert a knife in the middle and it comes out clean. If the knife comes out wet with the egg mixture pop the casserole back into the oven for an additional 10 minutes and check again.
Substitutions
- Vegetables - If you aren't a fan of bell peppers or can't do nightshades, feel free to sub them for spinach, broccoli, or zucchini!
- Gluten-Free - To make this recipe gluten-free, use gluten-free crescent rolls
- Low-Sodium - Make sure the breakfast sausage that you buy is low-sodium or swap it for one that is lower in sodium.
Variations
- Spicy - Use a spicy plant-based sausage to give this breakfast casserole a kick or top with some crushed red chili flakes.
- Cheesy - Top with your favorite vegan cheese before baking to make this sausage breakfast casserole extra cheesy.
- Southwest- Take this into a Southwest direction by adding green chiles or pickled jalapenos and drained sweetcorn. Season the Just Egg with some cumin and oregano and serve with cilantro and drizzle with hot sauce.

Make-Ahead Instructions: Refrigerate unbaked casserole, covered, for several hours or overnight. Preheat oven to 375°. Remove casserole from refrigerator while oven heats. Bake as directed, increasing time as necessary until a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving.
