When it gets cold out, there is nothing that I love more than a warm and hearty soup. It is even better if it is something that I can throw in my slow cooker, go about my day and have a delicious meal at dinnertime. That is what I love about this crockpot taco soup. This soup is warm, delicious and so, so easy! Using mostly canned or frozen ingredients, this soup is also super budget-friendly!
We eat this soup at least a couple of times a month and it is quickly becoming one of the most requested meals with our friends. You are going to love it!

Ingredients and Substitutions
- Spices- This recipe uses garlic powder, onion powder, smoked paprika, chili powder, cumin and cayenne. Feel free to substitute it with a package of your favorite taco seasoning.
- Frozen Vegetables-Feel free to swap the frozen vegetables for canned or fresh!
- Black Beans-Feel free to swap with your favorite type of beans! Pinto beans are one of my favorite swaps.

How to Make Crockpot Vegan Taco Soup
Quick Overview
- Add all of the ingredients to your crockpot
- Cook on high for 3-4 hours or low for 4-6 hours
Step By Step Instructions
Step One: In a large skillet, heat the olive oil over medium-high heat. Add the impossible meat and cook until brown.
Step Two: Add all of the ingredients to the crockpot
Step 3: Add the vegetable broth, cover, and cook on high for 3-4 hours or on low for 4-6 hours.
Step 4: Ladle into bowls, top with your favorite toppings, and enjoy!

This soup is great on it's own, however, we love to load it up with a variety of different toppings. Some of our favorites are:

Storage
This soup is perfect for leftovers. Allow the soup to cool completely and then store covered in the refrigerator for up to five days.
To freeze the soup, allow it to cool completely and then ladle it into a freezer-safe container. Label and date and freeze for up to three months.
Top Tips
- There is no need to thaw the frozen vegetables before you add them to the crockpot. Feel free to just add them in frozen!
- If you prefer using dried black beans instead of canned, make sure to soak the beans overnight and add an extra 2 cups of broth or water to the crockpot.
- Feel free to use fresh vegetables if you prefer!

If you want your soup a little on the thicker side, before serving, add half of the soup into a blender and blend until smooth. Pour it back into the crockpot and stir to combine.
