I have to admit, I have a thing for crockpot meals. Those set it and forget it type of dinners. I work full time so often by the time I get home I just want something quick and easy. Crockpot dinners are also the perfect meals for the weekends when your weekend is filled with chores and yardwork. I love after a long day, just being able to scoop a bowl of soup and know that dinner has made itself. One thing I love about this slow cooker vegan taco soup is that it is full of bold flavor and has great spices! I make a big batch of this soup and then eat it throughout the week during lunch. It is perfect!

Ingredients
The ingredients in this recipe are easy and simple to make and so delicious! This is the perfect budget meal as well, as most of the ingredients are frozen or canned.
- Frozen bell peppers and onions
- Black Beans
- Rotel
- Vegetable Broth
- Fire Roasted Corn
- Garlic Powder
- Onion Powder
- Chili Powder
- Smoked Paprika
- Cumin
- Cayenne
- Vegan Heavy Cream

Instructions
Drain and rinse the black beans, add all ingredients to the crockpot except for the heavy cream. Cook on low for 7-8 hours or on high for 3-4 hours.
About 30 minutes before serving, add in the vegan heavy cream. The addition of the heavy cream will give the taco soup a creamy flavor and texture. Cover and cook for 30 more minutes.
When ready to serve, spoon into bowls and top with your favorite toppings, we love jalapeños, tortilla chips, and vegan sour cream!
Hint: I love to use frozen vegetables when possible over canned vegetables. Frozen vegetables are picked at peak ripeness and then flash frozen.

Storage
Store the soup in an airtight container for up to five days. This soup makes for the perfect lunch the next day!
These ingredients don't stand up well to freezing.
Top tip
I keep this budget-friendly by relying on cans and frozen vegetables. There is no need to thaw the vegetables before you put them in, they will cook with the soup.
