Who else is excited for the changing seasons and the cooler weather? I know I am! The moment the weather dips below 80 degrees, I start to get my soup recipes out. I love soup so much. I love that I can make a huge batch of soup and then eat on it throughout the week. Additionally, soups are just so warming. I love feeling cozy and soups hit the spot perfectly.
This cabbage roll soup is so easy and delicious to make. It is cozy and filled with all the warming vegetables. This cabbage roll soup basically functions as an unstuffed cabbage roll in a bowl with some broth. Cabbage rolls are truly a global dish, being served throughout Europe, Asia, and even parts of Africa.
This cabbage roll soup has a lot of European flavors with basil and oregano, tomatoes, beans, rice, and of course, cabbage. You won't want to miss this recipe, it is truly delicious!

Ingredients
The ingredients in this recipe are easy to source and fresh. You can find all the ingredients at your local grocery store.
- Kidney Beans-The kidney beans in this recipe add bulk, protein and carbs. They help to make the dish a rounded out dish. You can swap the kidney beans for white beans, lentils, or your favorite plant-based ground beef.
- White Rice- The white rice is traditional in cabbage rolls and added to the soup it provides an extra element that bulks up the soup. Feel free to swap the white rice for Brown Rice or Quinoa
- Green Cabbage- The star of the recipe, green cabbage is extremely versatile. It holds up perfectly in this soup and doesn't get soggy.
- Vegan Worcestershire Sauce- To add the depth of flavor that is found from traditional cabbage rolls, we are using Vegan Worcestershire Sauce in this recipe. This brand is my favorite, but if you don't have it on hand, feel free to sub with soy sauce, coconut aminos or tamari.

Instructions
- Sauté the onion and carrots until softened for about 5 minutes. Add the garlic and spices and saute for another 2-3 minutes.
- Add all of the rest of the ingredients to the Dutch Oven and stir to combine.
- Bring the soup to a boil and then reduce to a simmer. Simmer for around 30 minutes or until the rice is fully cooked.
- When the rice is fully cooked, ladle it into bowls and garnish with fresh parsley and serve with some crusty bread.
Hint: The rice will absorb some of the liquid in the soup, if you want it to have a bit more liquid and not be as thick, add a little additional vegetable broth to the soup before serving.
Substitutions
- Low Sodium-To make this cabbage roll soup low sodium, make sure to use a low sodium Vegetable Broth, low sodium kidney beans and omit the salt from the recipe
- Nightshade-Free-Leave out the tomato sauce and make sure there are no tomatoes in your veggie broth and this will be a delicious nightshade-free dinner!
- Keto-Sub out the beans for your favorite plant-based meat alternative and sub out the white rice for a keto rice alternative such as cauliflower rice or hearts of palm rice.
Variations
Crockpot instructions
- Add all of the ingredients to the crockpot except for the rice, cook on low for 7-8 hours or on high for 4-6 hours.
- About half an hour before serving, add the rice and cook on high for 30 minutes. Ladle and serve into bowls.
Instant Pot Instructions
- Turn the Instant Pot to the saute setting. When the display says HOT add in the onion and carrots. Cook for about 3 minutes.
- Pour in the broth and scrape the bottom of the pot. Dump in the remaining ingredients.
- Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the SOUP button to 4 minutes. When the time is up let the pot naturally release for 10 minutes and then move the valve to venting. Remove the lid. Stir the soup ladle and serve in bowls.

This unstuffed cabbage soup recipe tastes earthy and warm. The earthy flavors of the Worcestershire Sauce pair well with the acidity of the tomatoes and the crunch of the cabbage. All of the ingredients lead to a well balanced soup.
You could call this Vegan Cabbage Roll Soup Golumpki soup if you prefer. This soup is very similar to Golumpki. It is vegan so instead of the meat we have beans but the premise is the same.

Storage
Store the soup in an airtight container for up to four days. Note that the longer you store the soup, the more liquid is going to be absorbed into the rice. Often, I have to add additional liquid when reheating.
These ingredients don't stand up well to freezing.
Top tips
- The key to making this soup perfect is making sure you cook the rice all the way through but not making it mushy at the same time. I find that 30 minutes at a simmer is the perfect amount of time.
- The rice will continue to absorb the broth the longer it sits, sometimes when I eat this for leftovers, I add a little broth to the soup before reheating.
- Make sure to slice your cabbage into bite sized pieces. If you slice it too large it will be challenging to eat with a spoon.
Vegan Cabbage Roll Soup
Ingredients
- 3 Carrots
- 2 15 oz cans Kidney Beans
- 1 Cup White Rice
- 3 cups Green Cabbage
- 1 Yellow Onion
- 29 oz Tomato Sauce
- 1 tbs Vegan Worcestershire Sauce
- 6 cups Vegetable Broth
- 1 teaspoon Parsley
- 1 teaspoon Oregano
- 1 teaspoon Basil
- 3 cloves Garlic
- 1 teaspoon Salt
- 1 teaspoon Pepper
