These Vegan Freezer Burritos are the ultimate meal prep. Make a big batch of these and freeze them for a quick and healthy on-the-go meal for busy days.
Who doesn't love burritos? I know I do! When I was in college I basically lived off these freezer burritos. I would make a big batch once a month and eat them all the time. When you are a broke college student, you have no issue eating the same thing over and over again. I would be able to throw these burritos in the oven straight from the freezer before class and then eat them on the way. I loved these burritos so much, I still make them and eat them to this day. It is easily one of my favorite cheap and quick recipes.

Ingredients
The ingredients in this recipe are cheap and budget friendly.
- Frozen Bell Peppers
- Potato
- Carrot
- Almond Milk
- Cashews
- Vegan Beef
- Black Beans
- Taco Seasoning
- Nutritional Yeast
- Flour Tortillas

Instructions
Bring a pot to boil and add the chopped carrot, potato, and cashews. Boil on high for 20 minutes.
While the carrots, potatoes, and cashews are boiling, start working on the meat filling.
In a deep skillet, add the frozen bell peppers and 1 tablespoon of olive oil. Saute over medium heat until thawed. Add the vegan beef, black beans, taco seasoning, and ⅓ cup of water. Stir to combine. Once warmed through, set aside.
When the carrots, potato, and cashews are finished boiling, drain and add to a high-speed blender along with the nutritional yeast and almond milk. Blend until smooth.
To assemble the burritos, spread the tortilla with the cheese sauce and add ½ cup of the meat filling. Fold the bottom of the tortilla up and over the filling, and pull the filling back toward the bottom third of the tortilla. Now make two folds on either side of the large fold. Roll it up! As you go, use the tips of your fingers to tuck and press the filling into a tight cylinder.
Hint: It is important to keep your tortillas warm before you fill them, I like to warm my tortillas and use this to keep them warm!
Substitutions
- Beans - Feel free to use any beans that you want. Heck, you could even just make these bean and cheese freezer burritos with refried beans.
- Meat - If you are a meat-eater, feel free to make these freezer burritos with chicken!
- Breakfast - Want a breakfast freezer burrito, try adding some vegan eggs to the mixture!

Oven Instructions
Set the oven to 425 degrees. Take the burrito out of the tin foil and lay it on a cookie sheet. Bake for 30 minutes. If the tortilla starts to get too dark tent tin foil over the top.

Equipment
Equipment can have a big impact on how a recipe turns out. I recommend a deep saute pan to make the meat filling as we are making a lot of burritos. Additionally, I like to use this blender to make sure my cheese sauce is smooth as can be.
Storage
Roll each burrito in tin foil and store it in the freezer until you plan to eat them. They will last up to four months in the freezer.
Top tip
Make sure not to overfill the burritos or all your filling will spill out!

Food safety
- Cook to a minimum temperature of 165 °F (74 °C)
- Do not use the same utensils on cooked food, that previously touched raw meat
- Wash hands after touching raw meat
- Don't leave food sitting out at room temperature for extended periods
- Never leave cooking food unattended
- Use oils with high smoking point to avoid harmful compounds
- Always have good ventilation when using a gas stove
