Is everyone ready for Thanksgiving? I can't believe that it is only a few weeks away?? Where has this year gone? I was talking to Michael the other day and we both agreed, since the onset of COVID, it seems like everything has just blended into one long year. It is hard to believe that January 2019 will have been three years ago. What even is life? Anyways, I digress Sweet Potato Pie. Is this one of your staple Thanksgiving desserts? If it isn't, it should be! A partner to the almighty Pumpkin pie, this Vegan Sweet Potato Pie will be a welcoming refreshment to any Thanksgiving table.

Ingredients
The ingredients in this recipe are so easy! You can find them at any grocery store.
- Pie Dough
- Brown Sugar Swerve
- Evaporated Coconut Milk
- Flax Eggs
- Canned Sweet Potatoes
- Cinnamon
- Nutmeg
- Ginger
- Allspice
- Cloves
- Black Pepper

Instructions
Preheat the oven to 375 degrees. Drain and rinse the sweet potatoes. I like to give them a really good rinse because most often they are packed in syrup which I am not a fan of. So I wash all the residual syrup off of them.
Make the flax eggs and set them aside.
Add the sweet potatoes to a bowl and using a wire masher, mash the heck out of the sweet potatoes. Once the sweet potatoes are fully mashed, add in the spices, sugar, flax eggs, and evaporated milk. Stir to combine.
Spray a round glass pie pan with cooking spray and then roll out the pie dough. Add the pie dough to the pie pan and then fill it with the sweet potato filling.
Pop that baby in the oven for 45-50 minutes. You will know when the pie is done by sticking a knife in the middle and it comes out clean. Let the pie rest for several hours before cutting and serving.
Hint: If you cut the pie while it is still too hot, the filling might be a little runny and you won't get great slices. The pie will firm up as it cools.
Substitutions
- Coconut Free - Feel free to make your own evaporated milk if you want to make this Vegan Sweet Potato Pie with no coconut. To make your own evaporated milk, simmer some plant milk over low heat for around 2 hours or until it is reduced by half.
- Dairy - If you aren't vegan, feel free to make this pie using regular dairy evaporated milk and replace the flax eggs with 2 chicken eggs.
