Dice the bell pepper, onion, and celery and add to a hot cast-iron skillet. Saute over medium heat until the vegetables are soft and tender. About 5 minutes
Add the cajun seasoning to the bell pepper mixture and stir until combined.
Slice the beyond sausage into coins and add to the bell pepper mix. Cook on medium-high heat until the sausage starts to brown. About 5 minutes.
Boil the penne noodles according to the package directions. Once finished, drain but reserve ½ cup of the pasta water. Add the noodles to the skillet with the pesto and heat until warmed through.
