In a large skillet, heat the olive oil over medium-high heat. Add the vegan sausage and cook until brown.
In a non-stick skillet or pan, pour in the just egg and scramble it until it resembles scrambled eggs.
Layer the chips onto the baking sheet, and try to spread them evenly as possible.
Layer the scrambled vegan eggs over the tortilla chips, spreading them until they cover the whole sheet pan.
Layer the vegan sausage, bell peppers and cheese over the top of the tortilla chips.
Bake for 20 minutes or until the cheese is melted and the nachos are warmed through. Serve this family-style or serve up on plates and enjoy!
