In a large skillet, heat the olive oil over medium-high heat. Add the impossible sausage and cook until brown.
Add the diced onion, bell peppers and mushrooms. Sauté over medium heat until soft. About 10 minutes. The mushrooms will shrink as they lose their moisture.
In a measuring cup, pour the Just Egg and spices and stir to combine.
– Top the frittata with vegan cream cheese. Pour the egg mixture over the vegetable mixture in the skillet. – Bake at 375 for 1 hour or until the center is no longer jiggly. Serve immediately
