Easy Blueberry Toast

This Blueberry Toast is the perfect sweet treat! Fresh bread topped with a creamy spread and then loaded with a blueberry compote, it's the perfect way to use the fresh in season blueberries!

What you'll need: Dairy-Free Cream Cheese – Dairy Free Yogurt –  Blueberries – Maple Syrup – Lemon – Water – Loaf Artisan Bread

– Place the blueberries, maple syrup, lemon juice and 1 tablespoon of water in a small saucepan over medium heat and stir to combine.

– Bring the mixture to a simmer, stirring often until the berries soften and begin to break down, lightly mashing the berries to release their juice. Add the remaining ½ cup of blueberries and cook for another minute or two until the mixture is thick and syrupy.

In a small bowl, mix together cream cheese, yogurt, and lemon zest until smooth and spreadable. – Toast your favorite bread. I like a nice, crusty seeded loaf for this.

– Spread the cream cheese mixture on each slice of bread. Top with a dollop of blueberry compote. – Before serving, sprinkle with extra lemon zest if desired.
