Preheat oven to 350 degrees. Using either a stand mixer or a hand mixer, cream together the butter and sugar until well incorporated. In a separate bowl, combine the flour, baking soda, and salt and set aside.
Add the pumpkin puree and vanilla extract to the bowl with the butter and sugar. Stir until well incorporated.Slowly add in the flour mixture in one cup increments and fold until incorporated. Fold in the chocolate chunks.
Using 1/4 measuring cup, measure out the cookies and roll them into a ball, and place them on a baking sheet. These cookies will spread so make sure to space them far enough apart.Bake for 20 minutes and then transfer to a cooling rack to cool completely.
