Who doesn't love an easy 30-minute dinner? This Baked Walking Taco Casserole will please the whole family and is perfect for those busy weeknights! 

What you'll need: Diced Tomatoes – Penne Noodles – Bell Peppers – Yellow Onion – Black Beans – Vegan Cream Cheese –Taco Seasoning – 1 cup Fritos

– Preheat the oven to 350 degrees – Finely dice the bell peppers and onions. Saute the bell peppers and onions over medium heat until the onions are translucent. About 5 minutes.

– Add the drained black beans, fire-roasted tomatoes, and seasonings. – In a large Dutch Oven, bring salted water to a boil and boil the noodles according to the package directions..

– Drain the noodles and add to the vegetable mixture, stir to combine. – Dollop the vegan cream cheese on top of the skillet.

– Bake for 10 minutes. After taking it out of the oven, stir the melted cream cheese into the pasta until it is mixed through and the sauce has coated the noodles. – Top with Fritos and garnish with lettuce, cilantro, tomato, and pickled jalapeños if desired.
