This Blueberry Toast is the perfect sweet treat! Fresh bread topped with a creamy spread and then loaded with a blueberry compote, it's the perfect way to use the fresh in season blueberries!
Place the blueberries, maple syrup, lemon juice and 1 tablespoon of water in a small saucepan over medium heat and stir to combine.
Bring the mixture to a simmer, stirring often until the berries soften and begin to break down, lightly mashing the berries to release their juice. Add the remaining ½ cup of blueberries and cook for another minute or two until the mixture is thick and syrupy.
In a small bowl, mix together cream cheese, yogurt, and lemon zest until smooth and spreadable.
Toast your favorite bread. I like a nice, crusty seeded loaf for this.
Spread the cream cheese mixture on each slice of bread. Top with a dollop of blueberry compote.
Before serving, sprinkle with extra lemon zest if desired.

Don't skimp for a loaf of good quality bread. When making a fancy toast such as this blueberry toast, quality bread is key. I love buying an artisan loaf from my grocery store and slicing it up.
If your blueberry compote is too thin, let the blueberries break down some more. If it is still not getting thick, you might have added too much liquid to the pan. You can fix this by mixing one tablespoon water with one tablespoon cornstarch until a slurry forms and then pouring it into the mixture.
Topping with extra lemon zest will give it a burst of bright flavor in every bite!
