Mango Pico de Gallo

  • 2 pounds roma tomatoes
  • 1 mango
  • ½ white onion
  • cup cilantro
  • 1 jalapeno
  • 2 tablespoons lime juice
  • salt and pepper to taste


  • Dice the tomatoes, mango, onion, jalapeno and cilantro.
  • Add all of the ingredients into a mixing bowl.
  • Toss until well combined.
  • Taste and add more salt or lime juice if needed.


  • Make sure to use ripe mangoes. To tell when a mango is ripe, there should be a little give when squeezed. It should be slightly soft. Just like other fruit, riper mangoes will have a more intense and sweeter flavor. 
  • Taste and adjust the flavors. It is always key to taste your recipe before serving. If needed, add more salt or lime to taste.
  • If you don't like spice, you can omit the jalapeno or swap it for green bell pepper.
