Equipment

  • 1 cutting board
  • 1 baking sheet
  • 1 Food Processor

Ingredients
  

  • 1 cup Diced Mango
  • 6 Roma Tomatoes
  • 1 White Onion
  • 1 cup Cilantro
  • 2 Habaneros
  • ¼ cup Lime juice
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • 1 teaspoon Cumin

Instructions
 

  • Cut the habaneros in half and remove the seeds. Add them to a baking sheet. Cut the tomatoes and onion in half and place on the baking sheet with the peppers
  • Add the vegetables to the oven and broil on high until charred and blistered. About 5 minutes.
  • Place the roasted vegetables, mangoes, cilantro, salt, garlic, pepper cumin, and lime in the bowl of a food processor or blender.
  • Blend until smooth. Serve warm or chill overnight.

Notes

  • Make sure to use fresh mango. Fresh mango will bring a brightness and acidity that canned mango or frozen mango just can't replicate.
  • Taste and adjust the flavors. It is always key to taste your recipe before serving. If needed, add more salt or lime to taste.
  • If you don't like spice, you can omit the habanero or swap it for jalapeno.
  • Handling the peppers can cause a burning sensation on your skin. I encourage you to wear gloves while cutting these up.
